Roast Turkey for Thanksgiving or Christmas

Lovely ,juicy roast turkey, perfect for Thanksgiving or Christmas dinner.

Method

1. Preheat an oven to 350 degrees F (175 degrees C).

2. Mix together the parsley, rosemary, sage, thyme ,salt and lemon juice in a small bowl.

3. Rub the herb mixture into the cavity of the turkey, then stuff with the orange, onion, and carrot and bit of champagne.

4. Place the turkey into the roasting pan. Pour the chicken broth and champagne over the turkey.

5. Cover with aluminum foil over the top of the turkey. Try to keep the foil from touching the skin of the turkey breast or legs.

6. Bake the turkey in the preheated oven for 3 1/2 hours (for 7kg bird - based on 30- 40 mins per kg + 30 mins at the end - depending on your oven!) Check the bird is no longer pink at the bone and the juices run clear.

7. Uncover the turkey, and continue baking until the skin turns golden brown, for approximately 30 mins

Hints 'n' Tips

If you have fresh rosemary and sage - add a sprig of each to the cavity and to the roasting pan
