Classic Roast Turkey recipe for Christmas dinner


Cut the celemtines in half and with the sprigs place in the cavity.
Work 2/3rds of the butter between the skin and meat as far up as you can using a spoon.
Spread the remaining 3rd over the skin.
Season well.
When cooking has finished stand the turkey for 2 hours with 2 sheets of foil and 2 tea towels before carving.
