- 4 LARGE, RIPE BANANAS
- 125-250 ML CHOPPED NUTS (OPTIONAL)
- 2ML VANILLA EXTRACT

THIS IS A SOUTH AFRICAN RECIPE WHICH I FOUND AND MODIFIED TO SUIT ME AND MY FAMILY. IDEAL FOR WHEN THOSE BANANAS IN THE FRUIT BOWL ARE A LITTLE TOO RIPE TO EAT. ALSO FREEZES WELL

Sift flour with baking powder, bicarb of soda, salt and cinnamon. Cream butter and sugar until light. Add eggs, one at a time, beating well between additions and adding 5ml of the flour mixture with each egg. Add flour mixture to creamed mixture alternatively with bananas, beating well until smooth. Stir in nuts and vanilla.
Pour into a lined and lightly oiled 26 x 9 x 7cm loaf tin.
Smooth top and bake at 180 degrees in the centre of the oven for 50 minutes to 1 hour. turn out, remove paper and cool. Serve sliced and buttered.
Chef's Tips
Please watch that this cake does not burn in the oven. If it is looking too brown on top and is still raw inside and the recommended cooking time is not yet reached, place a piece of silver foil lightly over the top so as to prevent burning.
