Description
I am following weight watchers at the moment and I'm finding the easiest way to stick to this is by pre-preparing lots of delicious soups which are all low in points!
Method
-
1
1. Soften onions in a heavy bottomed pan
2. Add the veg and sautee for a few minutes
3. Add enough chicken stock to cover the veg (you can add more later to achieve the consistency you like)
4. Add Salt & Pepper
5. Boil until all veg pieces are soft
6. Using a hand blender blend the soup. You can add more stock here if you want soup to be thinner consistency
7. Add 1-2 table spoons of ww thick cream and season to taste.
I use the soup bags to store individual potions of soup in the fridge / freezer so I can always have a healthy meal available and each portion is only half a point! You can use what every veg you may like for this recipe.
