Ingredients
- 1 packet mushroom
- 1 tbsp. sundried tomato
- 2 cloves garlic
- 1 tbsp. primula and chive spread
- 1 tsp. italian seasoning
- 1 tbsp. breadcrumbs
- 1 tbsp. virgin olive oil
- 1 tsp. smoked paprika
- 2 cups rocket leaves
- 1 tbsp. balsamic vinegar
- 2 bruschetta
- 2 cups spinach

I dedicate this recipe to Helen my long suffering partner, who has with great fortitude, tolerance and dedication endured all my eccentricities.
Method

1. Clean off your mushrooms, remove the stalks and put a small splurge of Sun dried Tomato paste into the centre of each Mushroom.
2. Crush Garlic clove(2)and put a little or a lot according to taste on top of the splurge of Sun dried Tomato paste.
3. Now fill up the cup of each Mushroom with Primula Cheese, n Chive Spread.
4. Now spinkle the Mushies with dried Italian seasoning or dried Oregano.
5. Now according to taste either add fresh breadcrumb/parsley mix to the top of the Mushies or make a buschetta type toast for the bottom layer. Plz dont do both , chose either option.
6. Drizzle each mushie with extra Virgin Olive and a little dash of smoked Paprika.
7. Now bake in oven on baking parchment at around 180 C for 10-15 mins depens on size of the Mushies.
8. Serve with some tossed Rocket leaves with a separate sweep of Balsamic Vinegar reduction, or try serving on top of Bruschetta, then spinach(plain or creamed)then your Mushies which should be drizzled with the sauce which comes from the Mushies while cooking.
