Ingredients
- 1ยฝ tbsp vegetable oil
- 1 onion (chopped)
- 8 bacon rashers (chopped)
- ยฝ tbsp tomato puree
- 400g can chopped tomatoes
- 1 tbsp dark brown sugar
- 1 tsp dijon mustard
- 1 tsp dried thyme
- 1 tsp worcestershire sauce
- 400g can cannellini beans (drained and rinsed)
- 1 red pepper (deseeded and chopped)
- 6 sausages
- handful fresh parsley (chopped)

Description
This is one of my favourite recipes. It is so tasty.
Method

1) Preheat the oven to 190C. Toss the sausages with 1/2 tbsp of oil and spread them out on a baking tray.
2) Cook for 30 minutes until browned all over, turning occasionally.
3) Meanwhile heat 1 tbsp of oil in a casserole dish. Add the onion and bacon and cook for 10 minutes until softened.
2) Turn up the heat and add the tomato puree. Cook for 2 minutes.
3) Add the chopped tomatoes, sugar, mustard, thyme, worcestershire sauce and 100ml of water and bring to the boil. Cook over a low heat for 15 minutes.
4) Add the beans and peppers, the simmer for 15 minutes more, topping with more boiling water if required.
5) Nestle the sausages among the beans, then cover the casserole fish and place it in the oven. Cook for 30 minutes.
6) Remove from the oven and sprinkle over the parsley. Season.
