Description
This soup is nutritious and easy to make. It is real comfort food on a cold day served with crusty bread, garlic bread or ciabatta. It is also suitable for vegetarians.

1. Chop and fry onion in olive oil until softened.
2. Peel and chop carrots.
3. Place all ingredients in a large saucepan, bring to boil, then cover and simmer for thirty minutes.
4. When cool, liquidise, retaining a small amount of the soup.
5. Mix liquidised soup into retained original soup and reheat to serve.
