Ingredients
- 350g Quorn Mince
- 1tbsp Oil
- 1 onion, finely chopped
- 1 clove garlic crushed
- 1 Β½ tsp chilli powder
- Β½ tsp ground cumin
- Β½ tsp ground cinnamon
- 1 green pepper, chopped
- 2 x 400g tinned chopped tomatoes
- 1 x 215g red kidney beans, drained
- 2 tbsp tomato puree
- 2 tsp dried oregano
- 3 tbsp dried coriander leaf
- to taste salt and freshly ground black pepper
- boiled rice
- jacket potato and a dollop of soured cream

A great recipe I found somewhere for a vegetarian chilli.

1. Heat the oil in a large frying pan. SautΓ© the onion and garlic for 2 minutes, add the chilli powder, cumin and cinnamon and cook for a further minute.
2. Stir in the Quorn mince, coating it well with the spices and continue to cook for a further 1-2 minutes.
3. Add the green pepper, tomatoes, kidney beans, tomato purΓ©e and oregano. Stir in the coriander, season to taste with a little salt and freshly ground black pepper. Cover and simmer gently for 10 minutes. Serve.
Chef's Tips
If you'd prefer a meaty dinner simply substitute the quorn for lean minced beef. Brown the mince separately before adding it at step 2.
I made this last night and it was great, enough to last me three dinners!! i swapped in a few ingredients to whip it up faster including diced frozen tomatoes, diced onions and switched in some mushrooms instead of green peppers!! to be even cheeky i used steam rice straight from the freezer and takes 3 mins to cook in the microwave! a great meal in minutes!!
