Description

I made this soup forthe first time last halloween using pumpkin instead of butternut squash, and it immediately became my favourite soup! Its easy to make and tastes delicious.

Method

  1. 1

    1. Dice the onion & chop the garlic

    2. Peel and chop the sweet potato & squash (for the squash, cut it in half after peeling and scoop out the seeds with a spoon)

    3. Fry off the onions and garlic, then add the chopped sweet potato and squash.

    4. Once the veg is heated through, add the stock (1L is an approx amount. You just need enough to cover the veg.)

    5. Put a lit on and boil until the veg is soft (usually takes about 40 mins)

    6. Blend until smooth (let the soup cool before blending! If you don't have a blender, just boil the soup until it's smooth. This will take a lot longer, but the effect is the same)

    7. Add cumin & pepper to taste (I like to add a lot of cumin to make it rather spicy.)
