Ingredients
- 2 Β½ lbs mixed meat (e.g. beef beef and lamb lamb and chicken)
- 2 oz butter or oil
- 2 large onions finely chopped
- 2 large carrots finely chopped
- 1 green pepper finely chopped
- 5 celery sticks finely chopped
- salt pepper nutmeg
- 2 garlic cloves
- Β½ cup chopped parsley
- 1 egg
- Β½ cup white bread soaked in water and squeezed out
- FOR THE MUSHROOM SAUCE
- 6 oz mushrooms
- 2 oz butter or oil
- 2 large tomatoes peeled
- ΒΌ pt water
- ΒΌ pt creme fraise (optional)
- fresh mint
- 1 tbsp soy sauce
- 1 tsp green peppercorns
- 2 tsp dijon mustard

1. Cook onions for approx. 40mins in oil or butter. Add garlic, celery, carrot, pepper, and cook slowly until tender and translucent.
2. Add parsley and spices to meat. Set aside to cool. Mix vegetable mixture into the meat add the bread (soak bread first). Add egg and mix again. Season. Form into a long loaf. Roast for 1 - 1/4 hours on Gas Mark 7/425degrees/180degrees.
For the mushroom sauce:
3. Cook mushrooms in butter or oil. Add tomatoes, peppercorns, mustard and water. Simmer for 30 minutes. Liquidise with the fresh mint. Season to taste.
