- 110g Cooked spinach drained and pureed
- 110g Cream cheese
- 60ml Grated parmesan cheese
- 1 Beaten egg
- To taste Salt
- To taste Pepper
- To taste Freshly-grated nutmeg

1. Mix the spinach with the cream cheese, Parmesan cheese and enough egg to make a soft paste. Season with the salt, pepper and ground nutmeg.
2. Roll the pasta into a rectangle. Cut the pasta into squares. Put a teaspoon of the filling mixture in half of all the squares. cover each of the squares with filling on them with ones that don't. Seal it up with water, or by spreading the leftover egg along the sides of one of the squares with a pastry brush.
3. Cook the pasta, a few at a time until they rise to the top. This should take 4-5mins. Serve hot with melted butter and grated cheese or Bake in the oven with Sauce Napoli (Also on PASTA CRAZY's profile)
