Heat a deep fryer to 108 degrees C, or oil in a frying pan (enough to cover the chicken).
Here's the messy bit...
Beat 3 eggs for now (beat more later if you need to)
Coat the chicked in Flour - Egg - Flour.
I tend to get 3 bowls, two for flour and one for eggs and line them up with a plate at the end. I put a few fillets in the first flour bowl and give them a good coating then take them out 1 at a time and dip them in the egg and then in the other flour and rest it on the plate.
When you have about 6 done lower them into the oil and make sure, if using a deep fryer they dont stick to the net. If using a frying pan turn half way through the cooking.
When they are cooked, they will float, remove them and set aside on a paper kitchen towel, you can keep them warm in a low oven.
Repeat with the rest of the chicke until it's all cooked.
Serve as finger food with the honey and sesame seeds in small bowls for your guests to dip the chicken in, honey first and then the sesame seeds...ENJOY!!!
