Ingredients
- 1 thinely sliced leek
- 440g chicken breast thinly sliced
- 2 cups rice
- olive oil spray
- 4 cups liquid chicken stock
- 1 cup skimmed milk
- 2 tbsp grated lemon rind
- 3 tsbp snipped fresh chives
- salt and pepper for seasonings

1. Heat a pan that has been sprayed with oil. Cook the leek for 2-3 minutes on medium heat
2. Add the chicken, cooking and stirring until it starts to brown
3. Stir the rice into the mixture, cooking for 1 minute
4. Add the stock, milk and lemon to the mixture. Let it simmer for 25 minutes, stirring occasionally
5. Add the chives and season with salt and pepper: cook for 5 minutes. Then serve and enjoy!
