Ingredients
- 1 cup sugar
- 1 cup sultanas
- 1 cup raisins
- Β½ cup glace cherries
- Β½ chopped almonds
- 2 teaspoons mixed peel
- 1 cup water
- 8oz self raising flour
- 2 large eggs
- 1 teaspoon mixed spice
- 1 pinch salt

Description
This is my Granny's recipe. The aroma of the simmering ingrediants always takes me back to a time long ago when I was a little girl and I helped by stirring in the flour.

Oven Temperature 160 degs/gas mark 3.
Place everything except the eggs and flour in a large pan and bring to the boil.
Turn the heat right down and simmer gently for about 15 minutes.
Leave to cool thoroughly preferably overnight.
When cool stir in the eggs and flour then put in a 7 inch round, loose bottomed tin which has been double lined with grease proof paper.
Cook for around 2 hours.
After about 1 hour cover the top with grease proof paper. Leave to cool before turning out.
Decorate as you choose.
Chef's Tips
To avoid the bottom of the cake burning while cooking stand the tin inside another larger tin.
Cook at least a month before Christmas and wrap it in grease proof paper and store in a tin. Once a week pour 1/2 small egg cup of brandy or sherry over the top.
