I originally made this from a recipe book and make a small mistake with the type of sherry, I think it made the dish even better.

Method

    Add to a large pan or wok 10 or 12 cloves of garlic complete with skins, just crush them slightly. When they start to brown add the chicken and brown off.

    Add a bay leaf and a sprig of thyme. Then add a good splash of a sherry called Pedro Ximenez [Madeira will do as well].

    This sherry is very common in Spain it is a sweet sherry, almost a port and similar to madeira, this is the accident that I mentioned earlier [it should have been manzanilla a much dryer sherry].

    When this has thickened a bit add the chicken stock and leave all of this simmer down until you have a wonderful over runny jam type texture, sprinkle with parsley and serve.
