- 4 oz. butter
- 1.5 oz. caster sugar
- 5 oz. plain flour
- 1 tsp. baking powder
- 1 tsp. ground ginger
- 2 level tbsp. icing sugar
- 1.5 oz. butter
- 1 level tsp. ground ginger
- 3 level tsp. Golden Syrup

Shortcake - beat butter to a soft cream, then beat in sugar well. Mix flour, baking powder and ginger together while sieving. Mix in. Grease a round cake-tin and spread the crumbly mixture in, making it slightly lower in the centre. Bake for 40min at 320.
Icing - while shortcake is still hot in tin, melt the 4 icing ingredients in a pan, stir and pour over centre of shortcake.
Cut into slices when just cool.
