Ingredients
- 8 thick slices day old bread
- 300ml milk
- 1 eating apple ( cox's are great)
- 350g mixed dried fruit
- 50g chopped mixed peel
- 3 tablespoons soft dark brown sugar
- 2 tablespoons mature orange marmalade
- 40g self-raising flour
- 2 eggs beaten
- 1 teaspoon lemon juice
- 1 level teaspoon ground cinnamon
- 2 level teaspoons ground mixed spice
- 100/125g butter

Description
This is a great recipe, I make it every christmas for friends and family, great instead of xmas pud. My mum used to make this when i was little. Last year I made 10 of these pudds

Break the bread, including the crusts, into small pieces and place in a mixing bowl, pour over the milk, i sometimes have to put nearly a pint of milk to soak up the bread or put half water, Leave this to soak for 20mins until soft.Beat well with a fork to form a smooth, lump free mixture.
Core and grate a peeled apple ( I use the course side)add this to mixture with the dried fruit and mixed peel.
Stir in the sugar, marmalade, flour, eggs, lemon juice, cinnamon and ground mixed spice.
Melt the butter and stir half into the bread mixture, beat well, using a wooden spoon, spread into greased 11x8inch ( 28x20cm) roasting tin or cake tin.
Pour the remaining butter in a thin stream evenly over the surface of the pudding.
Bake in a pre-heated oven for 2hrs at 150C or gas mark 2.
Increase oven temp to 180C or gas mark 4 and bake for further 30mins
Cut the pudding into 12 squares or what ever size you wish and serve hot with custard or cream or just cut and enjoy with a hot drink as a cake.
