- 110g Unsalted butter
- 580 ml Milk
- 580 ml Double cream
- 1 Vanilla pod split lengthways
- 4 Eggs
- 170g Caster sugar
- 6 slices Panettone
- 60g Sultanas soaked in brandy or grappa

This bread and butter pudding made with traditional Italian sweet bread is so creamy.

Heat oven to 160C/Gas 3, and butter a baking dish.
Put milk, cream and vanilla pod in saucepan and heat gently. Beat eggs with sugar until smooth.
Butter panettone slices and make 3 sandwiches with the sultanas as a filling. Cut to fit dish.
Bring milk and cream to the boil, and pour over egg mixture, whisking well. Pour over panettone and leave to soak for 15 mins.
PLace dish in large roasting tin and pour hot water into the tin to about halfway up the dish.
Bake for 45 mins. Eat hot or chilled.
Thanks Splosh. I had some leftover panettone at Christmas too, so I had a chance to use the recipe again - I'm glad I recorded it after using last year's leftovers, or I never would have remembered it!
Was given a panettone for Christmas and found this recipe. So light and creamy, beautiful! We swapped the brandy for baileys. So easy to make also for lots of oohs and aahs.
