I'd like to dedicate this recipe to Pat, a great friend of mine who's a WeightWatchers leader and has started me on a plan to reach a healthy BMI x

Method

    Preheat oven to 180 degrees then butterfly your chicken breasts (slice in half throught the centre).

    In a liquidiser place bread, salt & pepper, paprika, citric acid and thyme, blend until breadcrumbs. Crush the garlic and spread over chicken. Cover chicken in breadcrumbs then place on grill bars over an oven dish. Place in the oven.

    Then bring a large pan of salted water onto the boil and add dried pasta. When boiling add the frozen spinach and bring back to the boil. Reduce and cook until pasta's al dente (about 10 mins). Drain and add grated apple and vinegar.

    At this point the chicken should be cooked, check that juices run clear and serve with fresh herbs.

Chef's Tips

For vegans and vegitarians use a quorn breast and egg-free bread and pasta.

For a healthy lunch the following day take half a chicken breast and slice it up, put it on a jacket potato, add 50g WeightWatchers Soft Cheese with Roasted Onion & Chive and as much salad as you like, followed by a fruit smoothie - 7 1/2 points in total.
