Description

This dish is absolutely knock out! I tastes sensational, you can buy all the ingredients in the corner shop and it takes 10 mins to prepare. No excuses!

Method

    Pop your spaghetti into a pan of heavily salted boiling water. (Somebody once told me that when you're cooking fishy pasta dishes, the pasta water should be as salty as the Sea!)
    Roughly chop your onion and garlic and throw them into a pan of heated Olive Oil.
    Add your anchovies immediately. As the onions turn brown the anchovies will disitegrate into the oil. Nice!
    Once this has happened, add your tin of tomatoes and allow to simmer.
    Keep tasting and add some pepper and dry herbs (mixed, oregano, basil - whatever is in the cupboard). It should take 5 - 10 mins to reduce down nicely at which point you should add a handful of black olives and your capers.
    Keep tasting - you may need to add some salt, but remember that the pasta will also be salty! Add a healthy dose of pepper.
    Drain your pasta and stir the sauce in!
    I dont think you need to add any parmesan to this, but you might fancy it depending on your mood!

This is a truly surprising meal! I'm a bit of a cook and have tried many, many recipes for pasta - but this is a completely different taste to all of them. Even if you think you don't like anchovies or black olives or even capers, put them together like this and they are truly yummy and different. Wish I'd found this YEARS ago!
