This is a specialty of Judith's and as is her way, nothing is measured but always turns out brilliantly.
Peel the yams or the sweet potatoes and slice them about 1/4 think, along with red onions, these are placed in a 350 degree oven, covered with tin foil, and baked about 45 minuties or until not quite soft.
Remove from the oven and drain any accumulated liquids.
Cover with cream to make moist.. add salt and pepper.
Use a combination of cheeses.. pretty well any cheeses, ie, Blue Cheese, Cheddar, Goats, etc.
Sprinkle chopped parsley generously.
IMPORTANT bake again, in a very hot oven 450 degrees (220c) for 15 or so minutes, until slightly reduced and crunchy on top.
