Preheat the oven to 180ยฐC (350ยฐF).

Peel and dice 2 medium sweet potatoes into cubes.
Cooking Quinoa

Rinse 1 cup of quinoa under cold water.

In a pot, combine 1 cup of quinoa with 2 cups of vegetable broth or water and a pinch of pepper. Bring to a boil, then reduce heat and simmer for 15 minutes until the quinoa is fluffy.
Roasting Sweet Potatoes

Toss the sweet potato cubes in a bowl with 1 tbsp olive oil, 1 tsp smoked paprika, and pepper to taste.

Spread them out on a lined baking sheet and roast for 20-25 minutes until tender and slightly caramelized.
