- 50g/2oz Lard
- 30ml/2 tbsp Very cold Water
- 25g/1oz Sugar (if making sweet pastry)

1. Mix flour and salt in a bowl
2. Cut the fat into smallish lumps
3. Rub the fat in with the flour, until it resembles crumbs
4. Using a knife to cut and stir the mixture
5. Add the cold water to form a stiff paste
6. Turn dough on to a floured work top.
