- 1 tbsp Demerera Sugar
- 1 tsp Mixed Spice or Cinnamon
- 15gr Butter
- 300gr Diced uncooked apple ( either cooker or eaters )
- 175gr Butter
- 175gr Soft Brown Sugar
- 3tbsp Golden Syrup
- 275gr Self Raising Flour
- 3 Large Eggs
- 2 tsp Mixed Spice / Cinnamon - Optional

Description
Easy cake to make - great warm with custard or ice cream or cold just as a sponge slice. Make sure you cover the top well with crumble or cake will burn on top.

Method:
Place the butter, sugar and syrup in a saucepan. Heat gently until the sugar has dissolved.
Add the apples and stir gently
Stir in the eggs and flour and mix well.
Turn the mixture into a greased and base lined 2lb loaf tin or 8 inch loose bottom tine and smooth top.
Crumble
Mix together the plain flour, sugar and spice. Rub in the butter. Sprinkle evenly over the cake.
Bake at 325Β°F/160Β°C/Gas Mark 3 for 50 - 60 minutes until golden brown and firm to touch.
