Description

This is a one pan sauce that is great as a dip or with fajitas. It can be made as mild or as hot as you like by experimenting with different types of chilli.

Method

    Coursely chop the onion, green pepper and chilli peppers (leave the seeds and pith in for extra heat).

    Heat 1 tbsp olive oil in a deep sauce pan and heat until hot. Add the chopped ingreadients and heat not brown for about 5 minutes.

    Add the chopped tomatoes to the vegetable and coat well. Season with salt and pepper and sprinkle in the mustard seeds.

    Combine and simmer for 5 minutes more. This can be served warm or made in advance. It will keep in the fridge for up to 3 days.

    Serve as a dip with pitta bread or tortilla chips or use with various mexican and pasts dishes.
