- 1tbs olive oil

- 200ml Milk

I came up with this recipe whilst experimenting with differant ways to cook haggis - everyone who's eaten it absolutely loves it!

Place the haggis in a baking tin (I use a bread tin)and cook in a pre-heated oven at 190 degrees for 40 minutes. Ensure you rotate and fluff the haggis with a fork, breaking apart the meat, every 10 minutes or so.
Whilst the Haggis is cooking, boil your macaroni for 10 minutes (or until they are soft) then drain.
Grate your cheese.
In another pot, heat your olive oil, then add your flour. stir, turning it into a roux. Blend your milk bringing to a boil, then simmer. Add salt, pepper and a small ammount of cheese (only 50g or so).
Once the haggis is done, remove it from the oven and bring out a casserole dish. Begin layering in the following sequence:
Haggis
Macaroni
Sauce
Cheese
Repeat until all of the ingredients are used - you should finish the sequence in the correct order.
Top the dish with breadcrumbs (creates a nice crunch) and bake in the oven for 10 - 15 minutes, or until the bread crumbs are golden brown.
Chef's Tips
Try some parmesson cheese sprinkled across the top as well if you're feeling really cheesy!
