- 250g Pearl Barley
- 1 Medium Carrot
- 1 Leek
- 1 Medium Onion
- 2 Sticks Celery (optional)
- 1 large Potato
- 2 Beef Stock Cubes

Soak peas and barley overnight.
Dice all veg except potato. Cut Potato into larger chunks.
Rinse peas and barley, fill pot 3/4 full with water (you will need a large pot, I use a pressure cooker pot) Add stock cubes and all veg. Bring to the boil then simmer until veg is tender. Season to taste with salt and pepper.
Serve with crusty bread.
