Ingredients
- 3-4 breasts chicken
- 1 red pepper
- 1 small tin pinapple slices in juice
- optional baby corn
- 100ml rice wine vinegar
- 60-70g sugar
- 1-2 tbsp tomato puree
- 1-2 cloves garlic
- 1 inch fresh ginger finely chopped
- 1 tbsp soy sauce
- 50-100ml stock (chicken or veg)
- to taste salt and pepper

Great for using up left over chicken or pork

If using fresh uncooked chicken or pork then chop and fry off first, leave to side.
In sauce pan add garlic, ginger,the vinegar, sugar, tomato puree, soy sauce, chopped pinapple and its juice and stock. simmer for 10-15 minutes or until thickened slightly. Add peppers and corn.
Add chicken back in.
Taste and add more vinegar/sugar/stock/salt and pepper as needed.
Serve with boiled rice.
