Description

I was inspired to make this after a trip to Italy where we tried Bruschetta all over the country. The topping is adapted from what my dad puts on steaks.

Method

    FOR THE TOPPING
    1. Chop onion and pepper finely. Tear basil quite finely.
    2. Soak tomatoes in hot water for a minute or so, then make a small cut in the skin using a knife and peel the skin off.
    3. Chop tomatoes into quarters.
    4. Fry onion in a small amount of hot olive oil until browned, and season.
    5. Turn the heat down and add the tomatoes and peppers. Stir until warmed through and then remove from heat. Stir through basil.

    FOR THE BREAD
    6. If using baguette, chop diagonally into mediumly thick slices. If using ciabatta, chop in half horizontally, then into ~2.5in square pieces (roughly quarters depending on size of bread).
    7. Chop garlic cloves in half, and rub an open half on each piece of bread.
    8. Place on baking tray and drizzle lightly with olive oil.
    9. Place under grill until starting to brown.


    10. Spoon a small amount of the topping onto the bread and serve immediately

Chef's Tips

IMPORTANT: Serve immediately after adding topping, else bread will go soft.

Bruschetta can be served wholly hot or cold, or with the bread hot and the topping cold.
FOR HOT: Top grilled bread with topping straight from pan.
FOR COLD: Allow bread and topping to cool, then add topping just before serving.
FOR MIX: Allow topping to cool before grilling bread, then add topping just before serving.

Drizzle with balsamic vinegar just before serving to introduce another flavour.
