Description

When I lived with my sister I used to cook a lot. However, to make a meal stretch I used to randomly chuck bits and pieces into the mix. I ended up with this little corker

Method

    Preheat the oven to 200 C.

    Chop and core the peppers into strips. Finely dice half of the red onion and cut the other half into "half rings", do the same for the white onion. Cut the Aubergine and Courgette in to either strips or cubes. Add whole cherry tomatoes and crush and finely chop garlic. Place all vegetables in to a non-stick pan and drizzle with a little olive oil and place in the oven.

    Put the mince into a very large pan with a little olive oil and cook thoroughly. Cut 2 of the tomatoes into segments and add to the pan with a glass of red wine.

    Blitz the plum tomatoes in a food processor with half of the basil and a little pepper.

    Remove the now roasted vegetables from the oven and add to the pan. Add the sauce you have just made and stir in making sure it’s thoroughly mixed.

    In a large (very large!)Lasagne tray, thinly layer the mince and vegetables, place a layer of lasagne sheets over the mince, coat a thin layer of the white sauce over the sheets, and layer some more mince and vegetables on top, repeat this until you run out or reach the top. Finely chop the remaining basil and finely slice the remaining tomatoes. Sprinkle the grated cheese over it all, slice the mozzarella and place with the grated cheese. Finely chop the basil and sprinkle over. Place the tomatoes on top of the lasagne in the centre of each portion. Place the whole thing into the oven and cook for 1 hour.

    Once cooked allow to rest for a good 15-20 minutes. Serve with some garlic ciabatta a side salad and a very generous helping of Rioja!

Chef's Tips

Dont worry if you make too much of the meat and vegetables, you can freeze it as a large vat or what i used to do a lot was make individual portions freeze them and take them into work for lunch.

Also if not all the lasagne is eaten, again freeze it and serve it for a very lazy dinner another time!

For the vegetarians, you dont need to add the mince, you can do it with quorn, but I do find that quorn mince isnt that great and dulls the flavours of the vegetables.

Doing a bit of a romantic meal for 2? Use the other half of the Mozzarella Cheese by circling around a side plate Chunky Sliced Tomatoes and Mozzarella alternating, in the center add some shredded iceberg lettuce, a small amount of red onion and a vinigarette dressing.

Hello b0rd1e2 - I would love to cook this - as a vegetarian I am always on the lookout for new and better recipe ideas but without any ingredients I am having a few problems following this recipe - any chance you can put the quantities in on this recipe - Ill cook it and let you know how it turns out - Thanks :-)
