Rocky Road Sweets
Ingredients
- 125g/4oz milk chocolate
- 50g/2½ oz mini marshmallows
- 25g/1 oz chopped walnuts
- 25g/1 oz no-soak apricots

a great little bite to keep handy on special occasions as they will last for up to 2 Weeks in a cool dry place.
Method

1) Line a baking tray with parchment paper and set aside
2) Melt the chocolate over bowl over a pan of simmering water, once melted remove from the heat.
3) Stir in the marshmallows, nuts and apricots, until all ingredients are well covered.
4) Place heaped spoons of the mixture onto the baking tray, or spoon into mini sweet cup cases and leave to chill in the fridge until set.
5) Remove from the fridge and enjoy, or store for up to 2 wks in a cool dry place. Alternatively you can group a few of the sweets together and bag up in shop bought cellophane bags as gifts.
Chef's Tips
You could try using a good plain or dark chocolate to suit your flavour, or even white chocolate. You could also use any other nut you prefer, I myself like using macadamias or pistachios. The best thing is, it's a recipe that could evolve into almost anything you desire, or have in your cupboard.
