- 6 medium Tomatoes

A favourite Israeli/Sephardi dish - any Middle Eastern restaurant menu is incomplete without it! Everyone has a personal version..try Dr. Shakshuka's! For me, Aharon's is THE best!
Method

1) Use a large frying pan to saute the onion until lightly browned (if you like, add the garlic - optional - and the red pimento - also optional)
2) Grate the tomatoes on the largest holes of a grater - and mix them into the onion, covering the mix, and cooking it over a low heat for 25 minutes
3) Remove the cover and break the eggs over the surface - stirring them gently to break the yolks
4) Cover the lot and cook for about 3-4 minutes until the eggs are set
5) Sprinkle with salt and pepper, and eat with some fresh, crusty bread
