Description

I have always loved Avocados, using them in various dishes since I began cooking. This recipe saw me through university and gives me a genuine kick of energy and happiness!

Method

1
1. Trim the top off the Avocado and cut in half, remove the seed. Peel both halves and thinly slice.

2. Toast the bread - nice and crispy!

3. Arrange half the avocado slices on each piece of toast

4. Add pepper, then arrange the rocket & watercress leaves on top.

5. Grate the cheese over both slices - dont add too much or it will overpower the flavour.

6. Put under a hot grill for 30 seconds
