Vouvray Les Coteaux Tufiers Chenin Blanc

Classy white from the north bank of the Loire with honeyed pear and apple fruit flavours. Produced from very old vines from the Cotes de Vouvray. This is a delicious, medium-dry Chenin Blanc.     In a jug add 7 oz of boiling water, your chicken jelly stock pot, your touch of taste stock (any other form of chicken stock will do), your milk and some salt and pepper. Put this to one side

    In a pan fry your onions, garlic and leeks in a genorous amount of butter until soft.

    Now slice your potaotes thinly and evenly, and wash them in cold water.
    In an oven proof dish (with a lid), place potatoes one over the other to form a layer which covers the bottom, add some of your onions and leeks then some stock.
    Continue layring up your potatoes and leeks followed by a little stock (Id leave the top layre of the dish just potatoes no leeks as I think it looks better)
    Put a few knobs of butter on the top, then put the lid on and cook for about 30 mins at 140o. When you can put a fork easily through all potatoes its ready
