Ingredients
- knob of butter or margerine
- 2 tbpns Olive Oil
- 200 gms Smoked Salmon thinly sliced
- 2 large Leeks washed and thinly sliced
- small tub double cream
- Β½pt chicken stock
- 300 gms (or according to appatite!) Pasta Bows or Twists
- "handfull" or two! Cheddar Cheese grated
- Salt & Pepper

This is a real favourite - popular with my family 'cos it's delicious and popular with me, 'cos it is so easy! It tastes luxurious, but doesn't break the bank. Enjoy!

Put Butter/Margerine and Oil into large pan or wok and heat.
Add Leeks - stir and cook for couple of minutes.
Add Chicken Stock and bring to boil - simmer for 10 minutes.
Meanwhile, put pasta on to cook for approx 6 mins - until still al dente.
Drain Pasta and keep in pan.
Add Salmon to Leeks and stir in
Add Cream, Cheese and Salt and Pepper to taste.
Add pasta and bring to boil.
Serve with warmed Ciabatta and grated Cheese in a bowl.
