Fry your bacon slices in a pan with about 2 tablespoons of vegetable oil, turning regularly.
When almost cooked add your red onions and mushrooms, when cooked take your bacon out and wrap in kitchen paper to remove oil.
Turn the heat right up in the pan and fry your onions and mushrooms for another few minutes. Take them out and wrap them also in kitchen paper to remove oil.
Put a generous amount of mayonaise on your bread your lettuce, watercress and tomatoes if you like ( i dont )
Evenly spread your onions and mushrooms over lettuce and then your bacon.
