- 6oz Caster sugar
- 3 Eggs
- 2 teaspoons Baking Powder
- 1 teaspoon Cinnamon
- 6oz SR Wholemeal Flour
- 8oz Coarsley Grated Carrots
- 4oz Sultanas
- 1 tablespoon Milk
- Icing
- 4oz Cream cheese
- 8oz Icing sugar
- 1 teaspoon Vanilla essence

Kirsten doesn't like carrots but Carrot Cake is a favourite with her!!

Oven 180C
Cream together butter and sugar
Beat in eggs one at a time
Stir in baking powder, cinnamon flour and fold into mix
Add carrots and sultanas, stir
Add milk if too stiff
Put into a lined 7" round cake tin
Cook for about 1hr 30mins
When cold, mix together cream cheese, icing sugar and essence
Split cake in half and spread over, then spread over top
Keep in fridge
