Description

Having been on a budget for what seems like forever I've adapted my receipe to utlise cheaper meat and less meat to keep the costs down and help towards your 5 a day.

Method

    1. Peel and chop the carrot, celery, onions and garlic.

    2. Remove fat from bacon and discard and chop rashers.

    3. Spray a large pan with low fat cooking spray and add the onions, carrots, celery, garlic and bacon, cook on a low heat for 5-10 minutes until soft but not browned.

    4. If using cheap mince, fry this in a seperate pan until cooked (as cheap mince contains a lot of fat that is not needed in this receipe and the fat comes out once the meat is cooked.) Using a slotted spoon remove the meat from the pan, ensuring as much fat as possible is left behind and add the meat to the vegetables. The fat can now be discarded.

    5. Add salt and pepper and nutmeg to the meat and vegetables and give a good stir.

    6. Add the chopped tommatoes and tomato puree to the pan. Bring to the boil.

    7. Check the sea,soning as you may want to add some more salt and pepper and more nutmeg at this point.

    8. Turn the heat down low, partially cover the pan and simmer for 1hr. Stir occasionally so as not to let the bolognese stick to the bottom of the pan.

    9. After 45 minutes cook the pasta according to the packet instruction, drain and serve with the bolognese.

    10. Serve with parmasan cheese and garlic bread as desired.

    Minimal fat, maximum taste and a great way to get kids to eat their veggies.
