Description

I remember sitting in my Grandma Ann's kitchen rolling the mix into balls to either boil or fry.
Get the fishmonger to mince the fish with 1 onion for you. Less tears that way.

Method

    Put a large pan of water on to boil, with the onion & plenty of salt & pepper.

    Put the minced fish, onion, eggs & seasoning into a bowl, & mix well.

    Add enough matzo meal until the mix is smooth but firm. If necessary, add a little extra water.

    Form into balls & drop into the boiling water. Simmer for 1 hour 1/2 covered.

    When cool, lift the fish out & cover with a bit of the juice. Bring the remaining juice to the boil & add the slices of matzo. Leave to cool then refrigerate.

    All the mixing is best done by hand.
