- 228 g Margarine
- 340 g Caster Sugar
- 455 g Self Raising Flour
- 2 tsp Bicarbonate of Soda
- 2 tsp Baking Powder
- 2 large Eggs
- 2 tsp Vanilla Essence
- 340 g Stoned Dates
- 560 ml Boiling Water
- 285 g Brown Sugar
- 115 g Margarine (for syrup)
- 10 tbsp Water

Method

Preheat oven to 180 C.

Soak the dates in the boiling water, covered, for 5 mins then drain.

Mix the dates, margarine, flour, sugar, bicarb, baking flour, eggs & vanilla essence together with a wooden spoon.

Use an electric hand beater to mix everything thoroughly.

Pour into 1 large or 2 small casserole dishes & cook for 1 hour.

When the pudding is baked make a syrup of the remaining ingredients by boiling them together.

Prick the pudding all over with a fork & pour over 2/3 syrup to soak in.

Serve the rest of the syrup on the side.
