Salad with a difference

Method

Cook your rice according to the instructions - I find basmati is best. Put your rive into an appropriate salad bowl.
While the rice is still warm add the rice vinegar and olive oil.
Now finly chop the fresh mint and mix that into the rice mix.
Add the curry powder and stir that in.
Once therice and various other ingredients have cooled add the mango and the pine nuts.

Ingredients

Large Mango, Diced 2
Curry Powder 2 tsp
Fresh Mint ½ cup
Olive Oli 1 tblsp
Rice Vinegar 1 tblsp
Rice 2 Cups
Toasted Pine Nuts 150 g

Hints 'n' Tips

This salad works really well with BBQ meat.
