Ingredients
- 1-3 cloves Garlic
- 1-3 Green chillies, deseeded
- 1-2" Root Ginger
- 2 pints Boiling water
- 2 tbs turmeric
- 2 tbs soy sauce
- 1 tin Tinned Chopped Tomatoes
- 1" Creamed Coconut
- 2 tbs Thai Fish Paste (optional)

Finely chop and fry garlic, green chillies and ginger. Adjust quantities to suit your taste.
Add the rest of the ingredients and allow to simmer for at least half an hour. This is better prepared the night before as it gets better with time.
The ingredients can mostly be omitted or substituted without too much harm, the "must haves" are are chilli, garlic, ginger, toms, turmeric and creamed coconut.
