Ingredients
- 24 cloves Crushed garlic (around 1-2 bulbs)
- 1 medium Red Onion
- 60 grams Fresh Thyme Leaves (1 lg bunch)
- 1.5 litre vegetable stock
- 165g Spinach leaves
- 1-2 Potatoes peeled and chopped tomatoes
- 3 egg yolks

Description
I love garlic and it's better than Chicken Soup, as a "Feel Better" cure. Reminds me of my boyfriend who detests garlic's smell, but loves this soup.
Method

(20 mins veg prep, 20 mins cooking)
1) Sautee onion + garlic in olive oil
2) Add fresh thyme, sautee further 2 mins
3) Add stock, bring to boil, then simmer 7mins
4) Food process/ blitz till smooth
5) Add spinach, let simmer 3mins. Serve w/ toast
For Richer & Creamier additions:
(Egg yolk option: Whisk in yolks, simmer 3mins)
(Potatoe option: Add potatoes before stock, let boil then simmer 25 mins)
Chef's Tips
To further thicken the soup, you can add 6oz of cream along with the egg yolks. Personally, I can live without the egg/cream options because I find that a potato thickens the consistency quite nicely.
