- 400g pork fillets
- 4 Parma Ham Slices
- 3tbsp olive oil
- 50g Butter
- 100g gorgonzola cheese
- 180ml Martini Bianco
- salt and pepper

Place pork fillets on chopping board and cover with cling film, bash with meat hammer until flattened.
Heat Oil & Butter in a frying pan over a medium heat.
Once pan is hot, add pork and cook for 2 minutes until brown on one side. Transfer to a plate.
Divide the cheese into 4 pieces and place on top of cooked side of the pork. Lay a slice of parma ham on top and secure with a toothpick.
Return the meat to the frying pan, raw side down and cook for a further 3 minutes.
Add the Martini to the pan and allow to flame.
On a high heat, simmer for 1 minute until slightly reduced.
Stir in the butter and season.
Remove from the pan and remove the toothpick.
Serve on a warm plate with cheesy mashes potatoes!
