Ingredients
- 4 chicken breasts, diced
- 1 red onion
- 2 garlic cloves
- 50g (2oz) St Helen's Farm goats' butter
- 2 bacon rashers, diced
- 1 tbsp plain flour
- 1 can (400g) chopped tomatoes
- 1 chicken stock cube
- 8 lasagne sheets
- handful basil, roughly chopped
- For the Sauce
- 25g (1oz) St Helen's Farm goats' butter
- 25g (1oz) plain flour
- 300ml St Helen's Farm goats' milk
- 50g (2oz) St Helen's Farm goats' cheese

An easy, versatile and wholesome chicken lasagne recipe that the whole family will enjoy

Preheat the oven to 190Β°C/Gas Mark 5.
On the hob melt butter, fry onions bacon and garlic until soft.
Add chicken and cook gently until just turning brown.
Stir in flour and cook for one minute.
Add stock cube, tinned tomatoes and basil.
Cover with a lid and simmer for 10-15 minutes.
To make sauce:
Melt butter, add flour and cook over low heat for one minute.
Add milk a little at a time, stirring continuously beat until smooth.
Add cheese and stir in.
To make lasagne:
Use a large ovenproof dish.
Pour in half of the chicken mixture then layer with four lasagne sheets and then layer again with remaining chicken and lasagne on top.
Pour the cheese sauce on top.
Bake for 30-40 minutes until golden.
