Heat the oven to 200C/Gas6.
Mix the minced beef with 2 of the beaten eggs, the ketchup and season. Mix in the onion, garlic and herbs.
Mold the meat into a sausage shape and cook on a baking tray for 20 minutes. Remove from the oven and let cool. Remove any fat once cool.
Heat the butter in a small pan and and cook the mushroom slices with the garlic until softened. Remove from the pan and place on kitchen roll to cool.
Unroll the puff pastry sheet and brush with some of the remaining beaten egg. Place the mushrooms in a long strip in the centre of the pastry and place the cooled miced beef on top.
Slice the pastry on either side of the meat into 1cm strips fishtailing out from the edge of the meat. Criss-cross these over the meat and tuck under the ends. Brush with the remaining beaten egg and place on a tray and cook for 40 mins.
Cover with foil after 30 mins if the pastry is going too brown
