Ingredients
- 400 ml fresh orange juice
- 150 ml fresh lime juice
- 1 cup caster sugar
- 1 cinnamon stick
- 1 tsp. finely grated fresh ginger
- 10 star anise
- 6 kg leg ham
- 5 oranges. peeled. cut into 5mm slices
- 3 cloves

Description
Orange sugar and cinnamon glazed ham

1.Pour the juices, sugar and spices into a saucepan and bring to the boil (slowly!) Let it simmer and reduce for about 15 minutes. Set aside to cool and leave for at least 1 hour and strain the juice.
3.Use a small sharp knife to remove the fat and cut into the ham shank in a zig-zag pattern. Brush the juice all over the ham and lay slices of orange segments on the top. Stick a clove in to keep the oranges from sliding off. Shmear on the rest of the juice over the oranges.
4. Place a wire rack in a roasting pan and preheat the oven to 180C. Place ham on the rack and cover in foil. Add a little water to pan. Brush 1/4 cup of glaze over the ham.
5. Bake for 1 hour and 20 minutes. Brush occasionally with remaining glaze.
