Description

Typical Japanese Christmas cakes are round sponge cakes with whipped cream and fruit toppings.

Method

    Pre-heat the oven to 180C and grease 2 round baking tins

    1.Whisk eggs and add sugar little by little - whisk until the mixture is very pale and fluffy.
    2.Then sift flour and add to the egg mixture, mixing gently.
    3.Heat the milk in a pan a(don't let it boil) then add the butter and stir until the butter melts. Then pour the milk and butter into the flours and sugar mixture - if using an electric table mix - mix on low power.

    4.Pour the batter into the greased cake tins and bake in the preheated oven for 25-35 min. Then let it cool on wire racks

    To make the topping
    5.Whisk the double cream and sugar in a bowl until stiff.

    6.Take half of the whipped cream and mix with chopped fruits. sandwich the 2 halves together with the cream and then use the rest of the cream to cover the cake.

    7.Decorate the cake with colorful fruits and Christmas decorations.
