- 200g S.R. Flour

- 100g Soft Margerine
- 100g Caster sugar
- 1 Large Egg
- 125 ml Milk
- 200g Mixed Currents, Sultanas, Raisens
- 12 Glazed Cherries (halved)

A recipe out of an old Mc Dougall's baking book that never fails to please

Use a large bowl to beat together the Margerine and the Caster Suger
Blend the Spice Salt and Flour seperately then add to the
bowl along with the the egg beaten in the milk. Blend to a smooth creamy consistency.
Stir in the Fruit and Cherry halves
Transfer the mixture into a 160mm (approx) loose bottom
lined cake tin. Scatter some granulated suger on top for a crunchy finish and bake for about 1hr at 180c
Test for baked with a skewer by prodding deep in the middle of the cake. The skewer should come out clean
Chef's Tips
You might try this My Wife reccomends. Tying double or treble folded brown paper on the outside
of a cake tin (not the bottom) so that it protrudes about 20mm above the rim of the cake tin helps it prevent the outer extremes and top any cake burning
