- 100g Butter
- 2 Eggs
- 1 Orange. finely grated zest only
- 100g Caster sugar
- 100g Icing Sugar
- 125g Plain flour
- 1 tsp Baking powder
- 100g Icing sugar
- 1-2 tbsp Freshly squeezed orange juice

Description
Lovely sweet and sticky cake, perfect with a cup of tea or coffee.
The orange can be substituted for lemon or lime if you fancy a different flavour.

THE CAKE
1.preheat oven to 180c/gas mark 4, butter a 20cm cake tin and line the base with greaseproof paper.
2. Melt butter in saucepan and set aside to cool.
3. Using an electric whisk, whisk the eggs orange zest, caster sugar and icing sugar until light and fluffy. Stir in the melted butter until just combined and then sift in the flour and baking powder. Fold together gently
4. Pour mixture into tin and bake in oven for 35-40 minutes, Cake is cooked once a metal skewer inserted into cake comes out clean.
5. Place cake on a wire rack to cool.
THE ICING
1. Sift the icing sugar into a bowl, slowly add the orange juice until the icing is soft and not too runny.
2. When the cake has cooled, drizzle or pour the icing over the cake.
Chef's Tips
I find it best to make the cake in a spring sided tin as it's easier to remove cake once cooked.
Don't be worried if the cake falls a little in the middle.
If you make the cake with lemon or lime, in the icing substitute the orange juice for lime or lemon juice to complement the cake.
